Vegetable Pizza

Its been so hot the past few days that the thought of heating up the oven is almost unbearable. Imagine my surprise when Wendell suggested that I make a vegetable pizza for supper. I usually make this as an appetizer and never thought of it as a main meal idea, especially when I live with a 'meat eater'.

INGREDIENTS:


2 pkgs. - Crescent Rolls
2 pkgs. - Cream Cheese
1 cup - Mayonnaise
1 Tbsp - Dill Weed
1 Tbsp - Minced Onion
1 Cup - Cauliflower, chopped
1 Cup - Broccoli, chopped
1/2 Cup - Carrots, shredded and chopped
1 Cup - Tomatoes, diced
1/2 Cup - Black Olives, sliced (optional)
1 Cup - Cheddar Cheese, shredded


Prepare the crescent rolls, lining them up on a large cookie sheet to make the pizza crust. Bake according to the directions on the package. When it is golden brown, remove from the oven and let cool.

Next, add the cream cheese, sour cream, dill weed and minced onion in a mixing bowl. Blend until the mixture is creamy enough to smooth onto the crust. Be certain that the crust is cool. Spread onto the crust.

In order, spread your vegetables. Start with the carrots, cauliflower, broccoli, tomatoes, shredded cheese and then the black olives. Then cut into 3-inch squares for serving.

This is definately one of Wendell's favorites despite the lack of meat.
