Warm Soup For A Cold, Winter Day


Today must of really been my lucky day. First there was no school because of the ice storm and then Wendell decided he wanted to cook supper!

Since it was so cold, he made a big pot of Chicken and rice soup. The house smelled wonderful and the best news was that he made enough that I can freeze some for one of those nights neither one of us feels like cooking.

I really got a kick out of Wendell when he called me for supper because he asked if I was going to take a picture of the soup for the blog. He was so proud of himself for making it from scratch. Here is the recipe, if any one would like it.

Wendell's Chicken and Rice Soup

INGREDIENTS:

6 cups - Cold Water
3 - Chicken breast, large and skinless
3 stalks - Celery, with leaves, chopped
1 large - Onion, chopped
2 large - Carrots, sliced
1 tsp - salt
1/4 tsp - Black Pepper
1 tsp - Dried Thyme
1/2 tsp - Dried Parsley
2 - Bay Leaves
2 - Garlic Cloves, peeled and halved
1 cup - Rice

Place chicken in a 6 quart pan. Add the celery, carrots, onion, salt, thyme, pepper, parsley, bay leaves, and garlic. Add the 6 cups of Water. Bring to boiling; reduce heat and simmer, covered for 2 1/2 hours.

Add additional salt and pepper to taste, then serve.

It was a super easy recipe and great tasting. I should let him make soup more often!

  2. The soup looks yummy! Especially on a snowy day! Isn't it nice to have someone else make dinner. My husband was off work today and he made pot roast ~ tasted so good, especially since I wasn't involved in the prep!!
